KATANA Extra Dry Junmai Ginjo

Hamamatsu, Shizuoka Prefecture, Japan

Named for the famed samurai sword, KATANA Junmai Ginjo embodies sharp precision and disciplined craftsmanship. Brewed by Hananomai Brewery in Shizuoka—known for its pristine water and clean fermentation—this sake delivers a bold, full-bodied expression of dryness and depth.

Crafted in the Nama Chozo style, it is pasteurized only once before bottling, preserving its fresh, lively flavor and layered umami. While most dry sakes lean toward austerity, Katana stands apart: complex, rich, and structured, yet impeccably clean on the finish.

Aromas of ghee, tamari, and pearled barley mingle with subtle notes of melon, lychee, and black tea. The palate is satiny and vibrant, leading to a long, polished finish that enhances a wide range of foods—from yakitori and grilled meats to aged cheeses and hearty seafood dishes.

Winner of the 2019 BTI World Sake Challenge Gold Medal (90 pts, Exceptional), Katana offers restaurants and retailers a super-dry Ginjo that commands attention and complements modern cuisine.
