Okunomatsu, meaning “Deep Pine Forest,” reflects the calm purity of its mountain home in Fukushima. This Tokubetsu Junmai—literally “Special Junmai”—bridges the gap between classic Junmai depth and Ginjo refinement. Brewed with locally grown Tohoku rice polished to 60%, it offers both clarity and umami richness in perfect balance.

The 300ml format is produced in the Nama Chozo style—pasteurized only once before bottling—to preserve a livelier, fresher flavor. The 720ml version follows the traditional twice-pasteurized process, delivering a more rounded, polished expression.

Expect inviting aromas of honeydew melon, green apple, and chamomile, followed by a smooth palate of pear, coconut, and soft spice. A subtle note of banana and minerality lingers in the clean finish. This sake’s soft texture and balanced flavor make it accessible for new sake drinkers yet satisfying for experienced connoisseurs.
