The brewery prides itself on only brewing Ginjo and Daiginjo sakes using traditional methods combined with innovative techniques. Ninki Inc is particularly renowned for its sparkling sake, naturally carbonated in each bottle just like champagne, offering a unique and refreshing twist on classic Japanese sake. All of sakes at Ninki, except for competition brews, are fermented in wooden tanks, made
from 100-year-old cedar trees by Japanese artisans, which add immense depth and complexity to the sake.
